Make a fresh and delicious dinner in less time than you’d need to order takeout with these simple recipes.

Prosciutto-Wrapped Chicken with Roasted Squash

  1. On a large, rimmed baking sheet, toss 2 small acorn squash, seeded and sliced, with 2 tablespoons olive oil, 2 teaspoons fresh thyme leaves and 1/2 teaspoon salt. Roast in a 450 F oven 35 minutes or until tender.
  2. Season 4 skinless, boneless chicken thighs (about 1 1/4 pounds) with 1 teaspoon pepper; sprinkle with 3 tablespoons grated Parmesan. Wrap each in 1 slice prosciutto. Arrange chicken on foil-lined rimmed baking sheet. Bake 25 minutes or until cooked through. Serve chicken and squash with sauteed green beans.

Crispy Cod Cakes with Almond-Pepper Vinaigrette

  1. In a food processor, pulse 1 pound cod (or haddock) fillets, cut into chunks; 1/3 cup packed fresh basil leaves; 3 cloves garlic, crushed with a press; 1/2 teaspoon smoked paprika and 1/4 teaspoon each salt and pepper, until cod is finely chopped, stirring occasionally. Form into 8 patties; dip each into 1 large egg, beaten, and then 1 cup panko crumbs, patting to adhere.
  2. In a 12-inch skillet, heat 2 tablespoons vegetable oil on medium heat; fry cakes 3 minutes per side, or until deep golden brown.
  3. In a blender, puree 1/3 cup salted almonds, 5 tablespoons each sherry vinegar and olive oil, and 1/4 teaspoon salt until smooth. Add 1/3 cup roasted red peppers; pulse until almost smooth. Serve cod cakes with vinaigrette and salad greens.

Faster Steak Frites

  1. Cook 8 ounces frozen french fries as label directs.
  2. In a 12-inch skillet, heat 1/2 tablespoon vegetable oil on medium-high. Season 4 thin boneless top loin steaks with 1/2 teaspoon each salt and pepper. Cook 2 to 3 minutes per side for medium-rare, or to desired doneness.
  3. Combine 1/4 cup mayonnaise; 1/2 small shallot, finely chopped; 2 teaspoons water; 2 teaspoons lemon juice; 1 teaspoon finely chopped fresh tarragon; and 1/4 teaspoon pepper.
  4. Serve fries with steak and mayo. Garnish with chopped tarragon.

Kale and Roasted Cauliflower Salad

  1. On a large, rimmed baking sheet, toss 1 pound cauliflower florets with 2 tablespoons olive oil and 1/8 teaspoon each salt and pepper. Roast in a 450 F oven 25 minutes, or until stems are tender.
  2. In a large bowl, whisk 1/4 cup lemon juice, 3 tablespoons olive oil and 1/2 teaspoon salt. Toss 1 bunch kale, ribs removed, chopped, with dressing. Let stand at least 5 minutes.
  3. To kale, add cooked cauliflower; 1/4 small red onion, very thinly sliced; and 1/3 cup each crumbled feta cheese, golden raisins and toasted pine nuts. Toss until well combined.

Bacon and Gruyere Breakfast “Pie”

This easy-to-make breakfast dish will help you start the day off right.

Ingredients:

1 sheet (half of a 17.3-ounce pkg.) frozen puff pastry, thawed

1/3 cup sour cream

3/4 cup shredded Gruyere cheese

4 slices cooked bacon

3 large eggs

Fresh thyme leaves, for garnish

Directions:

  1. Preheat oven to 400 F.
  2. On a large sheet of parchment paper, roll pastry to a 12-inch-by-10-inch rectangle. Fold up 1/2 inch of the edges to form a rim. Using a fork, seal the rim and poke holes all over the pastry. Place pastry on cookie sheet; bake 20 minutes, or until golden brown.
  3. In a small bowl, combine sour cream and Gruyere. Spread onto tart, creating three wells for eggs. Arrange bacon strips over the topping. Crack eggs into wells; sprinkle with 1/4 teaspoon each salt and freshly ground black pepper.
  4. Bake until egg whites are set but yolks are still runny, about 12 minutes. Garnish with thyme.

The power adapter casing can break when plugged into an electrical outlet, exposing its metal prongs and posing an electric shock hazard. Consumers should immediately stop using the recalled power adapters and register online for a free replacement adapter, along with a Barnes & Noble $5 gift card. Once registered, consumers will be able to print a pre-paid UPS label to return the recalled adapters to Barnes & Noble.  Consumers will receive replacement adapters in the mail. 2014-2016 Isuzu NPR and NPR HD  

2016 Chevrolet Low Cab Forward 3500 and 4500 

The affected vehicles have a throttle pedal that may get stuck under the steel stopper bolt, causing the pedal to remain in the full throttle position. A stuck-open accelerator pedal may result in very high vehicle speeds and make it difficult to stop the vehicle, which could cause a crash, serious injury or death. Isuzu will notify owners, and dealers will remove and replace the stopper bolt with a flanged plate, which prevents lateral movement of the throttle, for free. The recall began Nov. 14, 2016. Owners may contact Isuzu customer service at 866-441-9638. Note: This recall applies to gasoline models only.
