Karen's Corner: Lemon Squares

There’s no “cookie” as scrumptious as Lemon Squares, and when there’s a tray of them, it’s all I can do to keep from making a pig of myself. Helen Robenstein of Eureka has sent in this particular recipe.
Crust:

1 C flour
¼ C powdered sugar
½ C melted butter

Filling:

3 T lemon juice
2 eggs
2 T flour
1 C sugar
½ t baking powder

Preheat oven to 350 °. Mix the crust ingredients, and press them into a 9×9” pan. Bake 20 minutes. Beat well the filling and pour on the crust. Bake 25 minutes. Sprinkle powdered sugar over top while still hot. Cut into squares while still warm.
