Karen'??s Corner: Orange Drop Cookies

 Jean Knapp brought these cookies to a recent meeting of the Woodford County Historical Society. They are great! The recipe originally came from Diane Braun of Lacon.

2/3 C shortening
¾ C sugar
1 egg
½ C orange juice
2 T grated orange rind
2 C flour
½ t baking powder
½ t baking soda
½ t salt
Orange Butter Frosting:
2 ½ T soft butter
1 ½ T orange juice
2 t grated orange rind
1 ½ C sifted confectioner’s sugar

Heat oven to 400 degrees. Mix shortening, sugar, egg and orange juice thoroughly. Stir in orange rind. Stir dry ingredients together and blend in the creamy mixture. Drop by rounded teaspoonfuls 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until delicately browned. Frost when cool.
To make frosting, blend all ingredients together until creamy.
Makes 4 dozen.
