Karen's Corner: Banana Apple Muffins

The original recipe called for “Old-Fashioned Oats,” but I only had “Quick Oats.” I didn’t grate my apple, because I detest grating anything. I minced the apple instead. The result was a pretty good muffin. This recipe makes 6. Just enough to try out the recipe.

¾ C oats
½ C flour
3 T sugar
1 t baking powder
½ t salt
¼ t allspice
¼ t cinnamon
1 egg
1/3 C milk
1 T vegetable oil
½ C grated, peeled tart apple
¼ C mashed ripe banana

Normally I don’t think it matters if you mix the dry ingredients together first, but in this recipe, it does. Put all the dry ingredients into a bowl and blend them thoroughly. Whisk the egg, milk and oil in a separate bowl. Add to the dry ingredients and blend until just moistened. Fold in the apple and banana.
Pour into greased and flowered muffin tin.
Bake at 400° for 25 minutes. Cool and store in a tightly sealed bag.
