Karen's Corner: Breakfast Takealongs

This recipe is from Cousin Joy in Aledo, who says it’s a good one to make on a gray, cookie-baking type of day.

2/3 cup margarine
1/2 tsp salt
2/3 cup sugar
1 1/2 cup oats
1 egg
1 cup shredded Cheddar cheese
1 tsp vanilla
1/2 cup wheat germ or fine nuts
3/4 cup flour
6 crisp bacon slices, crumbled
1/2 tsp soda 

Beat butter, sugar, egg and vanilla until blended. Add flour, soda and salt. Mix well. Stir in oats, cheese, wheat germ and bacon.
Drop on greased cookie sheet. Bake 350 degrees 12 to 14 min.
Cool and Store. About 3 dozen.
I think I must have added some chopped dates one time, because I remember having them that way.
