Karen'??s Corner: Microwaved Banana Nut Coffee Cake
November 5, 2008This is a tasty and easy coffee cake. It’s a good way to use up that last, overripe banana.
Make the nut topping first:
¼ C brown sugar
¼ C chopped nuts
1 t ground cinnamon
2 T flour
1 T softened butter or margarine
Combine the ingredients into a crumbly texture
Coffecake:
¼ C shortening, melted (butter is best)
¼ C milk
1 egg
½ C mashed ripe banana (about 1 banana –
I used about twice as much)
½ C brown sugar
1 C all-purpose flour
½ C chopped nuts
¾ t baking powder
½ t salt
¼ t baking soda
Combine the shortening, milk, egg, banana and sugar; add flour, nuts, baking powder, salt and baking soda, stirring only until flour is moistened.
Pour into a greased 8” round baking dish. Sprinkle with nut topping.
Microwave 9 to 10 minutes on Power Level 7; let stand, covered,
10 minutes. Store covered until ready to serve.
