Karen's Corner: Chicken in a Pot

I no longer have enough people eating at my house to use this recipe, but it was really good when there were kids around my table.
1 t tarragon or poultry seasoning
1 t salt
¼ t pepper
¼ t paprika
3 medium carrots, chopped
1 large green pepper, sliced or chopped
Sprinkle chicken inside and out with seasonings.
Oven: Bake in covered dutch oven at 400° for 30 min. Add potatoes, carrots, onion. Season with salt and pepper. Cover and bake 30 minutes. Remove cover and bake 10 to 15 minutes longer.
Microwave: Assemble all ingredients in microwave safe casserole. Cover and cook 30 minutes on high.
